TRY THIS! Coconut oil roasted pumpkin seeds!

Happy Halloween!!
Most of us love the idea of carving pumpkins and roasting the seeds. They’re delicious and pumpkin seeds are considered to have antioxidant properties as well as containing magnesium, zinc and healthy fatty acids, all of which are excellent for your heart! Roasted pumpkin seeds are also an excellent snack and a great source of fiber and protein!

Ingredients:
- Pumpkin seeds; rinsed, drained and dried as much as possible
- Sea salt or pink Himalayan salt
- Coconut oil; melt slightly if needed so that you can spread evenly on the seeds.
Instructions:
- In a bowl large enough to hold the seeds, pour the coconut oil over them and mix well, making sure that all the seeds are coated.
- Spread the seeds evenly on a cookie tray lined with parchment paper, making sure that the seeds aren't overlapping one another.
- Sprinkle the seeds with the salt of your choice.

You can add other spices to suit such as a dash of cinnamon, brown sugar, cloves and nutmeg, or garlic powder and black pepper.
